Beetroot Curry

Hello, everyone! Beetroot is a very healthy vegetable. It has more vitamins, minerals and it also helped with diet plans. It has fewer calories but more nutrients. And it is a delicious vegetable also. Here is a recipe for beetroot curry for any occasion.

Beetroot – 2 (sliced).

Coconut – one cup (shredded).

Cooking oil- 2 tablespoons.

Mustard – 1 tablespoon.

Onion – 2 (chopped).

Ginger garlic paste – 1/2 tablespoon.

Green chilies – 3.

Tomato – 2.

Turmeric powder – 1/2 tablespoon.

Chilli powder – 1 tablespoon.

Coriander powder – 1 tablespoon.

Coriander leaves.



Steps to follow

Step 1: First wash the beetroots and peel off the skin.

Step 2: Then cut them into cubes or any shape you like.

Step 3: In a mixer jar, add shredded coconut, grind to a fine paste. keep that aside.

Step 4: Then add 2 tomatoes, grind to a fine paste.

Step 5: In a pan add 2 tablespoons of cooking oil. When oil heated add mustard, chopped onions, and green chilly. Saute until onion gets a little golden colour.

Step 6: Add 1/2 tablespoon ginger garlic paste, saute for 2 minutes.

Step 7: Then add sliced beetroot, saute for a minute.

Step 8: Add grounded tomatoes mix all well together.

Step 9: Add 1/2 tablespoon turmeric powder, 1 tablespoon red chili powder, 1 tablespoon coriander powder, and salt as per your taste. Let it cook for 2 minutes.

Step 10: Then add coconut paste.

Step 11: Add the required water. Cook for 10 minutes.

Step 12: Finally add some coriander leaves.

Step 13: Ready for serve.
